Fish Game to open In Canary Wharf this July – 23.06.23

Restaurateur Roberto Costa, known for his much-loved restaurant group, Macellaio RC, will open Fish Game in London’s Canary Wharf on Monday 10 July.

True to its name, Fish Game will put ultra-seasonal, sustainable British ingredients centre stage with a pared-back seasonal changing menu of the UK’s best game and fish, meticulously sourced from the UK’s lands and surrounding waters and cooked simply over ash and the charcoal.

The newly unveiled menu will feature dishes such as; Rabbit croquettes with marjoram mayonnaise and lemon zest, Native Oysters, Crab and pork bao with curry sauce, Tigella bread with offal, rabbit, lemon and parsley gravy, Wild trout on toast with cucumber, smoky salad and fresh chilli, Mussels with venison nduja and Sea bream butterfly with datterino tomato, taggiasca olives and pine nuts.

Whilst Fish Game is something of a departure from all Italian Macellaio, Roberto Costa’s ethos when it comes to cooking, of balance, simplicity and authenticity will be core to Fish Game. Executive Head Chef, Matthew Colk (previously, the Roast and The Gun Pub) has worked closely alongside Roberto to bring Fish Game to Life.

Adding to the appeal of Fish Game will be a tequila bar, where Aperitivo will be served daily, bringing a touch of Roberto’s home, Italy, to London. The wine list menu will include some of the finest wines worldwide, both old and new, with a large focus on small artisan producers.

Samuele Lombardi, Fish Game’s head bartender will also be serving classic cocktails with a twist. As well as fronting an exciting collaboration with El Camion tequila, offering a selection of different tequilas and Mezcal.

Fish Game has been designed by Roberto and Franco Costa, who is the founder and owner of Costa Group, a successful European furniture leader famous worldwide. Distinctive elements will include a wood and charcoal grill, chandeliers, and octopus wood carvings, as well as a private room with a table for 12 people divided by a vintage cold storage door. With sustainability being a number one priority, the restaurant will be filled with vintage and reused furniture and the elements of earth, fire, water, and sky are to be distinctive throughout the design in a rustic, yet stylish way.

About Roberto Costa, Founder of Fish Game:

Roberto Costa was born and raised in Genoa, home of pesto, farinata and focaccia and one of the largest port cities in the Northwest of Italy. Displaying an early interest in food, he was only 17 when he started helping his mother make her famous minestrone soup with pesto at the family-run ‘Trattoria I dui Fre’ in the suburbs of Genoa.    

Three years later, Roberto opened his very own Pagura Bernarda Restaurant where he found a passion for the hospitality industry. Roberto went on to open several restaurants and bars in Genoa. In 2003, having gained enough knowledge and experience, he founded Maxela Ristorante Macellaria with branches in Genova, Milan, Rome, Turin, Livorno, Modena, Rimini, Isola d’Elba. Inspired by Maxela’s success in Italy and keen to showcase the best produce from his native homeland to a brand-new market, Costa took on his next challenge and moved to London to open the first Macellaio RC in South Kensington in 2012 with the latest opening in Soho in 2020. Following the success and growth of the Macellaio empire in the UK, and after Roberto fell in love with British produce, he decided he wanted to celebrate the quality of home-grown, local ingredients with his new concept Fish Game. The new restaurant will offer a daily catch of game and fish across the UKs land and sea. 

Roberto has received various recognitions from the Italian community thanks to his hard work in the UK, being elected as Genoese World Ambassador, the first gourmet ambassador and Director of the Italian Chamber of Commerce and Industry in the UK.

About Matt Colk, Executive Head Chef of Fish Game:

Matt Colk’s London culinary journey began in 2007, when he worked as a Chef de Partie at Christopher’s Bar and Grill in Covent Garden. Following this, he worked at the Roast in Borough Market, gaining valuable experience on both the grill and the sauce. Matt then joined Brooklands Restaurant as Head Chef at the Royal Automobile Club, Pall Mall, where he stayed for five years until 2015.

Matthew spent a significant part of his career at The Gun Pub in the Docklands, where he worked for more than eight years as Head Chef, working with Lake District Farmers and fishmongers at Billingsgate Market, developing his skills in menu creation and knowledge of game and fish. During this time, he not only curated a menu made up of fish and game dishes but learnt to butcher and prep the meat and fish, allowing him to make the most of the produce.

Colk now joins Roberto to bring this exciting new concept of using fish and game, cooked on the grill, to Londoners to showcase the best of British dishes with the warm, Italian atmosphere.
